Ingredients

  • 1 lbs sirloin or ribeye steak, cut into bite-sized pieces
  • 12 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1.5 tablespoons Cajun seasoning
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon onion powder
  • to taste salt and pepper
  • 1 cup heavy cream
  • 0.5 cup beef broth
  • 1.5 cups grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup cream cheese for extra richness
  • to garnish fresh parsley, chopped

Equipment

  • Large skillet
  • Large pot for boiling pasta
  • Colander for draining pasta
  • Measuring spoons and cups
  • Wooden spoon or spatula for stirring

Method

  1. Bring a large pot of salted water to a boil, add fettuccine pasta, and cook until al dente. Drain and set aside, reserving some pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Season steak bites with salt, pepper, Cajun seasoning, smoked paprika, and onion powder. Cook for 4-5 minutes until browned and cooked to desired doneness. Remove and set aside.
  3. In the same skillet, melt 2 tablespoons of butter over medium heat. Sauté minced garlic until fragrant, about 1-2 minutes. Add beef broth and heavy cream, stirring to combine and simmer for 3-4 minutes.
  4. Add cream cheese, Parmesan, and mozzarella cheese to the sauce, stirring until fully melted and smooth. Adjust with reserved pasta water if too thick.
  5. Add fettuccine and steak bites back to the skillet, tossing to coat in the sauce. Let simmer an additional 2-3 minutes. Garnish with parsley and serve hot.

Notes

For an extra kick, add a pinch of cayenne pepper to the Cajun seasoning. Store leftovers in an airtight container in the refrigerator for up to 3 days; add a splash of milk for reheating if needed. Consider using high-quality ingredients, especially the cheese and cream, for the best flavor. Adjust the Cajun seasoning to your taste preference, starting with a little and adding more if needed.
