- Bring a large pot of salted water to a boil and cook fusilli pasta until al dente, drain and set aside, reserving ½ cup of pasta water.
- Heat olive oil in a large skillet over medium-high heat, season steak bites with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
- Sear the steak bites in the skillet for 2-3 minutes per side until browned and cooked to your liking, then remove from skillet and set aside.
- In the same skillet, melt 1 tbsp butter, add minced garlic and sauté for 1 minute until fragrant.
- Stir in Cajun seasoning, red pepper flakes, and salt, then pour in heavy cream and milk, bringing to a gentle simmer.
- Add cream cheese and stir until melted and smooth, then add Parmesan and mozzarella, stirring until creamy.
- Toss cooked fusilli in the sauce, add steak bites, stir together and simmer for 1-2 minutes. Garnish with parsley and serve hot.
