Ingredients
  

  • 250 g flour
  • 100 g sugar
  • 75 g softened unsalted butter
  • 2 eggs
  • 150 g chopped candied fruits
  • 1 sachet vanilla sugar
  • 1 sachet baking powder
  • a pinch salt

  • Wire rack for cooling

Method
 

  1. Preheat your oven to 180 degrees Celsius (thermostat 6) and line a baking tray with parchment paper.
  2. In a large mixing bowl, cream the softened butter and sugar until smooth and fluffy.
  3. Add the eggs one at a time, mixing well after each addition until the mixture is glossy.
  4. Stir in the vanilla sugar and a pinch of salt, mixing gently.
  5. In another bowl, mix the flour and baking powder, then gradually add this dry mixture to the wet ingredients, stirring just until combined.
  6. Gently fold in the chopped candied fruits.
  7. Form small balls of dough and place them on the prepared baking tray, leaving space between each.
  8. Bake in the preheated oven for 12 to 15 minutes, or until the edges are lightly golden.
  9. Remove the biscuits from the oven, let them cool on the tray for a few minutes, then transfer to a wire rack to cool completely.
