  • 1 cup chopped pecans
  • 1/2 cup unsalted butter for caramel
  • 1 cup packed brown sugar for caramel
  • 1/2 cup heavy cream or whole milk for caramel
  • 1 teaspoon vanilla extract for caramel
  • 1 cup all-purpose flour for topping
  • 1 cup granulated sugar for topping
  • 1.5 teaspoons baking powder for topping
  • 1/2 teaspoon salt for topping
  • 1 cup milk for topping
  • 1/2 cup unsalted butter, melted for topping

Method
 

  1. Preheat your oven to 375°F (190°C) and prepare a 9x13 inch baking dish.
  2. In a saucepan, melt 1/2 cup of butter over medium heat, then stir in 1 cup of brown sugar, adding 1/2 cup of heavy cream or milk and 1 teaspoon of vanilla. Simmer for 5 minutes to make caramel sauce.
  3. In a large bowl, toss the sliced apples with both sugars, lemon juice, cornstarch, cinnamon, nutmeg, and pecans.
  4. Whisk together the flour, sugar, baking powder, and salt in one bowl, and mix the milk with the melted butter in another. Combine wet and dry ingredients gently.
  5. Pour the apple filling into the baking dish, drizzle with half the caramel sauce, and top with the cobbler batter. Bake for 40-45 minutes until golden brown.
  6. Let the cobbler cool for 10-15 minutes, then serve with the remaining caramel sauce and vanilla ice cream.

Notes

Feel free to mix different apple varieties for a more complex flavor. Use walnuts or sliced almonds as a substitution for pecans if desired. This cobbler can be made ahead of time, storing the filling and caramel sauce separately in the fridge before assembly and baking. For storing, cover tightly and keep at room temperature for a day or refrigerate for up to 4 days. Reheat in the microwave or a 300°F oven to enjoy again.
