  • 250 g all-purpose flour
  • 200 g cold demi-sel butter
  • 200 g granulated sugar
  • 10 g fresh baker’s yeast
  • 150 ml lukewarm water
  • 1 pinch salt

  • Round cake pan (8–9 inches)

Method
 

  1. Activate the yeast by dissolving it in lukewarm water and letting it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt.
  3. Add the activated yeast mixture and knead until you have a smooth, elastic dough.
  4. Cover the dough with a clean kitchen towel and let it rise in a warm spot for an hour.
  5. Roll the dough out into a rectangle on a lightly floured surface.
  6. Spread thin slices of cold butter evenly over the dough, then sprinkle generously with sugar.
  7. Fold the dough into thirds like a letter, turn it 90 degrees, and roll it out again.
  8. Repeat this process three times, adding more sugar each time.
  9. Shape the dough into a round and place it in a buttered cake pan.
  10. Let it rest for another 30 minutes while the oven preheats to 400°F (200°C).
  11. Bake for 35–40 minutes until deeply golden and caramelized.
