Ingredients
  

  • 900 g ground beef
  • 2 large onions thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 250 ml beef broth
  • 60 g breadcrumbs
  • 60 g grated Gruyère cheese
  • 2 eggs
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste salt and pepper

Method
 

  1. Preheat your oven to 190°C (375°F).
  2. In a skillet, melt butter and olive oil over medium heat. Add sliced onions and cook until golden brown (about 20–25 minutes).
  3. Once onions are caramelized, pour in beef broth and let it reduce by half. Remove from heat and cool slightly.
  4. In a large bowl, combine ground beef, breadcrumbs, grated cheese, eggs, minced garlic, Worcestershire sauce, thyme, salt, and pepper. Mix gently.
  5. Fold the cooled caramelized onions into the meat mixture.
  6. Form the mixture into a loaf shape and place it in a greased baking dish. Bake for about an hour, or until the internal temperature reaches 71°C (160°F).
  7. Let the meatloaf rest for 10 minutes before slicing and serving.
