- Preheat your oven to 180°C (350°F).
- Peel and thinly slice the onions.
- Heat olive oil in a pan over medium heat and add sliced onions.
- Cook onions for about 15 minutes, stirring occasionally until golden brown.
- Stir in honey and season with salt and pepper, cooking for another 5 minutes.
- Roll out the pie crust on parchment paper and transfer to a baking tray.
- Spread caramelized onions evenly over the crust, leaving a border around the edges.
- Crumble goat cheese over the onions and sprinkle fresh thyme if desired.
- Fold the edges of the pie crust over the filling.
- Bake the tart in the oven for 25 to 30 minutes until golden brown and bubbly.
- Remove from oven and let cool slightly before serving.
