- Preheat your oven to 180°C (350°F).
- In a skillet over medium heat, cook the lardons until golden and crispy; add onion if using and sauté until translucent.
- Lightly butter the bottom of each ramekin; spoon a tablespoon of crème fraîche into each and spread it evenly.
- Sprinkle the cooked lardons and crumbled goat cheese on top of the crème fraîche.
- Gently crack one egg into each ramekin without breaking the yolk; season lightly with salt and pepper.
- Place the ramekins in a baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins; bake for 10–12 minutes until the whites are set and yolks are runny.
- Remove from oven, let cool slightly, sprinkle with fresh herbs, and serve immediately with toasted bread.
