  • 3 whole eggs
  • 100 g sugar
  • 200 g flour
  • 1 packet baking powder
  • 200 g spreadable cheese like cream cheese
  • 150 g fresh strawberries sliced
  • 1 packet vanilla sugar
  • 1 tablespoon lemon juice

Equipment

  • Large mixing bowl
  • Whisk or hand mixer
  • Rectangular baking tray
  • Parchment paper
  • Spatula
  • Clean kitchen towel
  • Sharp knife for slicing

Method

  1. Preheat the oven to 180°C (350°F) and line a rectangular baking tray with parchment paper.
  2. In a large bowl, whisk together the eggs, sugar, and vanilla sugar until pale and frothy (3-4 minutes).
  3. Add the spreadable cheese and lemon juice to the egg mixture, folding gently until smooth.
  4. Sift in the flour and baking powder, folding until a smooth, lump-free batter forms.
  5. Pour the batter onto the prepared tray and spread evenly. Bake for about 20 minutes until golden.
  6. Let the cake cool for 5 minutes, then flip onto a clean kitchen towel and remove the parchment paper.

  8. Let the roll rest for 10 minutes, then slice into portions and serve.

Notes

Use room-temperature eggs for a lighter cake. Slice strawberries just before using to prevent them from getting watery. Ensure even spreading of the batter for uniform baking. Don’t skip the 5-minute cooling period before rolling; it prevents tearing. For a twist, you can add flavor variations or use different fruits.
