Ingredients
  

  • 12 oz cheese tortellini
  • 1 lb thinly sliced steak (sirloin or ribeye)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup shredded provolone cheese
  • ½ cup shredded mozzarella cheese
  • 4 oz cream cheese, cubed
  • Salt and black pepper, to taste
  • Chopped parsley (optional)

  • Pot for boiling pasta

Method
 

  1. Boil a pot of water and cook the tortellini according to package directions; drain and set aside.
  2. In a large skillet over medium-high heat, heat olive oil and sear the thinly sliced steak until browned; remove from pan and set aside.
  3. Melt butter in the same skillet, add diced onion, and cook until soft; then add minced garlic and cook for 30 seconds.
  4. Sprinkle flour over the mixture, stir to coat; slowly add beef broth while whisking to avoid lumps, then add heavy cream and simmer.
  5. Stir in cream cheese, provolone, and mozzarella until the sauce is smooth and creamy.
  6. Add cooked steak back to the skillet, then gently toss in tortellini; simmer for 12 minutes.
