Ingredients
  

  • 1 pound cheese tortellini
  • 1 pound thinly sliced steak such as sirloin or ribeye
  • 3 cups whole milk
  • 8 ounces provolone cheese shredded
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 large yellow onion thinly sliced
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • to taste salt
  • for garnish chopped green onions

Method
 

  1. Bring a large pot of salted water to a boil and cook the cheese tortellini according to the package instructions. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat and cook the thinly sliced steak for 3 to 5 minutes until browned. Remove and set aside.
  3. In the same skillet, add the remaining olive oil, sliced onions, and green bell pepper, cooking for 5 to 7 minutes until soft. Stir in minced garlic, Cajun seasoning, paprika, and black pepper, cooking for an additional minute.
  4. In a separate saucepan, melt the butter over medium heat, whisk in flour, and cook for 1 to 2 minutes. Gradually whisk in milk and bring to a simmer, stirring constantly for 5 to 7 minutes until thickened. Stir in provolone and Parmesan cheese until melted. Add salt to taste.
  5. Add the cooked tortellini and steak to the skillet with the veggies, pour the creamy sauce over everything, and toss gently to coat.
  6. Serve hot, garnished with chopped green onions.
