- Preheat your oven to 180°C (350°F).
- In a skillet, fry the bacon until golden and crispy; add onion if using.
- Transfer the bacon to a paper towel to soak up excess grease.
- Lightly butter the bottom of each ramekin and add a spoonful of cream, cooked bacon, and chunks of goat cheese.
- Crack an egg into each ramekin, season with salt and pepper, and add optional spices if desired.
- Place the ramekins in a baking dish and pour hot water halfway up the sides to create a bain-marie.
- Bake for 10-12 minutes until whites are set and yolks are runny.
- Garnish with fresh parsley or chives and serve with toasted bread.
