Ingredients
  

  • 4 eggs
  • 100 g smoked bacon lardons
  • 100 g goat cheese (log-style)
  • 4 tablespoons thick cream
  • 1 small onion (optional)
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)
  • Butter for greasing the ramekins

Equipment

  • Ramekins 4 individual-sized
  • Baking dish large enough to hold the ramekins
  • Skillet for frying bacon
  • Paper towels for draining bacon
  • Oven mitts to handle hot dishes

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, fry the bacon until golden and crispy; add onion if using.
  3. Transfer the bacon to a paper towel to soak up excess grease.
  4. Lightly butter the bottom of each ramekin and add a spoonful of cream, cooked bacon, and chunks of goat cheese.
  5. Crack an egg into each ramekin, season with salt and pepper, and add optional spices if desired.
  6. Place the ramekins in a baking dish and pour hot water halfway up the sides to create a bain-marie.
  7. Bake for 10-12 minutes until whites are set and yolks are runny.
  8. Garnish with fresh parsley or chives and serve with toasted bread.

Notes
