Ingredients
  

  • 450 g ground beef
  • 200 g uncooked white rice
  • 1 can (about 400 g) creamy mushroom soup
  • 150 g shredded cheddar cheese
  • 400 ml beef broth
  • 1 small onion, chopped
  • 15 ml olive oil
  • 1 tsp garlic powder

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Chop the onion and green bell pepper into small pieces.
  3. In a large skillet, heat the olive oil over medium heat and sauté the onion and bell pepper until soft (about 5 minutes).
  4. Add the ground beef and cook until browned, then drain any excess fat.
  5. Stir in garlic powder, salt, and pepper.
  6. In a separate bowl, whisk together creamy mushroom soup, beef broth, and uncooked rice.
  7. Pour the rice mixture into a greased baking dish, then spread the beef and veggie mixture on top.
  8. Cover with aluminum foil and bake for 45 minutes.
  9. Remove the foil, sprinkle cheese on top, and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  10. Let the casserole rest for 5-10 minutes before serving.
