  • 2 tablespoons olive oil
  • 4 tablespoons butter divided
  • 4 cloves garlic minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 lb rotini pasta
  • 6 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon Cajun seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

  1. Boil water and salt in a large pot for rotini and cook until al dente; drain and set aside.
  2. Toss chicken cubes with olive oil, Cajun seasoning, smoked paprika, salt, and pepper.
  3. Heat 2 tablespoons of butter in a skillet and cook chicken until golden and fully cooked; remove and let rest.
  4. In the same skillet, melt remaining butter and sauté minced garlic until fragrant.
  5. In a saucepan, melt butter, whisk in flour, and gradually add milk while stirring until thickened; stir in cheddar and mozzarella until melted.
  6. Combine cooked rotini with cheese sauce and toss until coated; top with garlic butter chicken bites and serve.
