- Boil water and salt in a large pot for rotini and cook until al dente; drain and set aside.
- Toss chicken cubes with olive oil, Cajun seasoning, smoked paprika, salt, and pepper.
- Heat 2 tablespoons of butter in a skillet and cook chicken until golden and fully cooked; remove and let rest.
- In the same skillet, melt remaining butter and sauté minced garlic until fragrant.
- In a saucepan, melt butter, whisk in flour, and gradually add milk while stirring until thickened; stir in cheddar and mozzarella until melted.
- Combine cooked rotini with cheese sauce and toss until coated; top with garlic butter chicken bites and serve.
