  • 1 lb bowtie pasta
  • 1.5 lb beef sirloin, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon black pepper
  • 0.5 cup beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 2 tablespoons chopped green onions, for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Cook the bowtie pasta according to the package instructions until al dente, about 8-10 minutes.
  2. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Season the beef with Cajun seasoning, smoked paprika, and black pepper, then sear until golden brown.
  3. Remove the beef from the skillet and set aside. In the same skillet, melt the remaining butter, add minced garlic, and cook until fragrant.
  4. Pour in the beef broth and heavy cream, bring to a simmer, then reduce heat and stir in the cheddar and mozzarella cheeses until melted and smooth.
  5. Combine the cooked pasta and seared beef into the cheese sauce, tossing to coat evenly.
  6. Serve immediately, garnished with chopped green onions.
