  • 25 g butter
  • 25 g flour
  • to taste salt and pepper
  • a pinch nutmeg (optional)

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, melt the butter over medium heat and then sprinkle in the flour, stirring continuously for about 2 minutes to form a roux.
  3. Gradually pour in the milk, whisking constantly until the sauce thickens (about 5–7 minutes), then season with salt, pepper, and nutmeg.
  4. Cut the hard-boiled eggs in half and arrange them cut-side up in a baking dish; scatter the diced ham over the eggs.
  5. Pour the hot béchamel sauce evenly over the eggs and ham, then sprinkle the grated cheese on top.
  6. Bake in the preheated oven for 20–25 minutes or until the top is golden and bubbly.
