Ingredients
  

  • 800 g potatoes preferably starchy like Russets
  • 200 g raclette cheese
  • 1 onion
  • 200 ml sour cream
  • 100 g bacon lardons
  • 1 garlic clove
  • to taste salt
  • to taste pepper
  • a few sprigs chives

Equipment

  • Baking dish approximately 9x13 inches
  • Mandoline slicer or sharp knife
  • Skillet
  • Spatula
  • Mixing bowl

Method
 

  1. Preheat your oven to 200°C (about 400°F).
  2. Peel and thinly slice the potatoes to about 2-3 mm thick.
  3. In a skillet over medium heat, cook the bacon until golden brown and crispy.
  4. Add the sliced onion and crushed garlic to the skillet and let them soften.
  5. In a baking dish, start with a layer of potato slices and season with salt and pepper.
  6. Sprinkle some of the bacon-onion mixture and add a handful of grated raclette cheese.
  7. Repeat layering until all ingredients are used, finishing with a final layer of potatoes.
  8. Pour the sour cream evenly over the top layer of potatoes.
  9. Scatter chopped chives across the surface.
  10. Bake in the oven for 30-40 minutes until the top is bubbling and golden brown.
  11. Let it rest for 5 minutes before serving.
