Ingredients

  • 2 lbs baby potatoes, quartered
  • 12 oz smoked sausage, sliced
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 0.25 cup sour cream
  • 3 green onions, thinly sliced
  • 2 tablespoons fresh parsley, chopped

Equipment

  • Large mixing bowl
  • Baking dish or sheet pan

Method

  1. Preheat your oven to 400°F (200°C) and grease a large baking dish or sheet pan.
  2. In a large bowl, combine the quartered baby potatoes, sliced smoked sausage, olive oil, ranch seasoning, paprika, and black pepper. Toss until evenly coated.
  3. Spread the mixture in a single layer in the baking dish. Roast for 35-40 minutes, stirring once halfway through, until the potatoes are tender and lightly browned.
