- Heat olive oil in a skillet over medium heat, add garlic, and sauté for about 30 seconds.
- Stir in spinach and cook until wilted, about 2-3 minutes; let cool then chop finely.
- In a large bowl, combine ground beef, egg, breadcrumbs, Parmesan, parsley, oregano, red pepper flakes, salt, and pepper; mix well.
- Add the cooked and chopped spinach to the bowl and mix until evenly incorporated.
- Take about 2 tablespoons of the mixture, flatten it in your hand, place a mozzarella cube in the center, and wrap the meat around it to form a ball.
- Heat olive oil in a skillet over medium heat and sear meatballs in batches for 2-3 minutes per side until browned.
- (Optional) Preheat oven to 375°F (190°C), transfer meatballs to a baking dish, and bake for 10-15 minutes.
- Serve warm with marinara sauce, pasta, or on their own, garnished with parsley and extra Parmesan.
