- Boil the diced potatoes in salted water for about 8-10 minutes until tender but firm. Drain and set aside.
- Sauté the turkey lardons in a hot pan until golden brown. Add the onions and garlic, cooking until translucent and fragrant.
- Mix in the boiled potatoes, season with salt, pepper, and thyme, and let the mixture cool slightly.
- Carefully slice off the top rind of the camembert.
- Roll out the puff pastry and place the camembert in the center. Spoon the potato-lardon mixture on top and fold the pastry edges over the filling.
- Brush the pastry with the beaten egg for a golden crust.
- Bake at 350°F (180°C) for 25-30 minutes until the pastry is deep golden brown.
- Let it rest for 5 minutes before slicing. Serve warm with a crisp green salad.
