Ingredients
  

  • 1 whole non-runny camembert
  • 1 sheet puff pastry
  • 100 g turkey lardons
  • 2 medium potatoes, diced
  • 1 thinly sliced onion
  • 1 clove garlic, minced
  • 1 beaten egg for glazing
  • to taste salt and pepper
  • a few sprigs fresh thyme (optional)

Equipment

  • Pot for boiling potatoes
  • Pan for sautéing
  • Rolling pin or wine bottle for puff pastry
  • Pastry brush for egg wash
  • Oven-safe baking sheet

Method
 

  1. Boil the diced potatoes in salted water for about 8-10 minutes until tender but firm. Drain and set aside.
  2. Sauté the turkey lardons in a hot pan until golden brown. Add the onions and garlic, cooking until translucent and fragrant.
  3. Mix in the boiled potatoes, season with salt, pepper, and thyme, and let the mixture cool slightly.
  4. Carefully slice off the top rind of the camembert.
  5. Roll out the puff pastry and place the camembert in the center. Spoon the potato-lardon mixture on top and fold the pastry edges over the filling.
  6. Brush the pastry with the beaten egg for a golden crust.
  7. Bake at 350°F (180°C) for 25-30 minutes until the pastry is deep golden brown.
  8. Let it rest for 5 minutes before slicing. Serve warm with a crisp green salad.
