  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup cherry pie filling
  • 1 cup dark chocolate ganache
  • q.s. fresh cherries for garnish to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round baking pan.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients and mix on medium speed for about 2 minutes.
  4. Stir in the boiling water until well combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Drizzle the dark chocolate ganache over the top, spread the cherry pie filling, and garnish with fresh cherries.
