Ingredients
  

  • 4 units chicken thighs with skin and bone
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 slices turkey bacon cut into thin strips
  • 2 tablespoons unsalted butter divided
  • 2 cloves garlic peeled and sliced
  • 8 units shallots peeled and halved or quartered if large
  • 7-8 sprigs fresh thyme
  • 1/3 cup water as a substitute for white wine

Method
 

  1. Rinse the chicken thighs under cold water and pat them dry with paper towels. Season generously with salt and pepper on both sides.
  2. Let the chicken sit for 2-3 hours at room temperature to enhance flavor.
  3. Preheat your oven to 350°F (180°C).
  4. In a large oven-safe skillet, cook the turkey bacon over medium-high heat until crispy and golden. Remove and set aside.
  5. Add one tablespoon of butter to the skillet and then add the chicken thighs skin-side down, cooking for 8-10 minutes until golden brown.
  6. Flip the chicken and cook for another 6-7 minutes. Transfer chicken to a plate and cover loosely with foil.
  7. Lower the heat to medium, add the remaining butter, and stir in the shallots and garlic. Cook for about 10 minutes until softened and caramelized.
  8. Nestle the chicken back into the skillet with the shallots, pour in the water, and sprinkle over the bacon and thyme sprigs.
  9. Slide the skillet into the oven and bake uncovered for 30 minutes.
