  • 4 pieces boneless, skinless chicken breasts
  • 2 cups mixed vegetables (carrots, bell peppers, zucchini)
  • 1 cup cherry tomatoes, halved
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • q.s. Salt and pepper to taste
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese (optional)

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the vegetables into bite-sized pieces.
  3. Toss the vegetables with olive oil, salt, and pepper in a large bowl.
  4. Season the chicken breasts with salt, pepper, thyme, and rosemary.
  5. In a large baking dish, spread the seasoned vegetables in an even layer.
  6. Place the chicken breasts on top of the vegetables and pour the chicken broth around the edges.
  7. Bake for about 30-40 minutes until the chicken is cooked through and the veggies are tender.
  8. Optionally, sprinkle with grated Parmesan cheese and return to the oven for an additional 5-10 minutes until melted and bubbly.
