Ingredients
  

  • 3 lbs chuck roast
  • 1 tbsp salt
  • 1 tsp black pepper
  • to taste chipotle in adobo sauce adjust to taste
  • 2 limes juice of limes

Method
 

  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast generously with salt and black pepper, rubbing it into the meat.
  3. Heat a large skillet over medium-high heat, add oil, and sear the roast on all sides until golden-brown.
  4. Transfer the seared roast to a roasting pan, mix chipotle and lime juice in a bowl, and pour over the roast.
  5. Cover with aluminum foil and cook in the oven for 4-5 hours, or until fork-tender.
  6. Remove from the oven, let it rest for 10 minutes, then shred using two forks.
