- Preheat your oven to 180°C (350°F).
- Melt the dark chocolate in a heatproof bowl over simmering water and set aside to cool.
- In a large mixing bowl, beat the eggs and sugar together until creamy and pale. Add the melted butter and milk, and mix well.
- In another bowl, whisk together the flour, baking powder, and salt. Add cinnamon if using.
- Gently fold the melted chocolate into the wet ingredients, then add the diced apples and mix until evenly distributed.
- Spoon the batter into the prepared muffin tins, filling each about two-thirds full.
- Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes
