Ingredients

  • 1 box Brownie Mix for an 8"x8" baking dish
  • 1 lb Strawberries, stems removed, cut in half
  • 1 cup Semi-Sweet Chocolate Chips or a mix of semi-sweet and dark chocolate
  • 1/2 cup Heavy Cream (up to 1 cup if more is needed)

Equipment

  • 8"x8" baking dish
  • Microwave-safe bowl
  • Spatula for stirring
  • Knife for cutting strawberries
  • Spatula for serving

Method

  1. Preheat your oven according to the brownie mix package directions and prepare the brownie mix for an 8"x8" baking dish as instructed. Bake the brownies and let them cool completely in the dish.
  2. While the brownies are cooling, remove the stems from the strawberries and cut them in half lengthwise. Arrange the strawberries in a single layer on top of the cooled brownie layer, seed side up.
  3. In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave for 25 seconds, then stir. Continue microwaving in 20-second intervals, stirring after each interval until the chocolate is fully melted and smooth.

Notes

Make sure the brownies are completely cool before adding the strawberries and ganache. For a richer flavor, use a mix of semi-sweet and dark chocolate. Drizzle white chocolate over the ganache for a touch of elegance. Store in an airtight container in the refrigerator. Best if consumed within a day due to the moisture from the strawberries. If you have leftovers, freeze brownies wrapped tightly to avoid freezer burn and thaw in the refrigerator overnight before serving.
