Ingredients
  

  • 70 g raisins or sultanas
  • 4 tbsp rum
  • 220 ml milk
  • 500 g wheat flour (Type 405)
  • 70 g sugar
  • 1 tsp lemon zest optional
  • 1 pinch salt
  • 20 g yeast approx.
  • 50 g soft butter
  • 1 size M egg
  • 1 size M egg yolk
  • 1 tbsp butter for brushing
  • 1000 ml cooking oil neutral, for baking
  • 2-3 tbsp powdered sugar for dusting
  • some flour to work with

Method
 

  1. Soak the raisins in rum in a small bowl and set aside.
  2. Heat the milk until lukewarm and combine in a large mixing bowl with flour, sugar, lemon zest, and salt. Crumble in yeast, add lukewarm milk, soft butter, egg, and egg yolk.
  3. Knead with a hand mixer for about 5 minutes until smooth and elastic.
  4. Cover the bowl and let the dough rise for 45 minutes.
  5. After resting, drain the raisins and gently knead them into the dough.
  6. Divide the dough into 10 parts and shape into balls, resting for 15 minutes.
  7. Flatten each dough ball and brush melted butter in the center.
  8. (Optional) Add a dash of cinnamon or nutmeg to the dough before shaping and frying.
  9. Fry the noodles in hot oil until golden brown, dust with powdered sugar before serving.
