Ingredients
  

  • 1 cup warm water
  • ¼ cup sugar
  • 1 tsp salt
  • 1 large egg, beaten
  • 2 tbsp butter
  • ¾ cup evaporated milk
  • 4 cups all-purpose flour
  • 3 tsp instant active dry yeast
  • q.s. Oil for frying as needed
  • q.s. Powdered sugar for dusting to taste

Equipment

  • Bread machine or stand mixer with dough hook
  • Deep fryer or large pot
  • Tongs or slotted spoon
  • Floured surface for rolling dough
  • Pizza cutter or knife

Method
 

  1. Add the ingredients to your bread machine in this order: water, sugar, salt, egg, butter, evaporated milk, flour, and yeast. Set it to the dough setting and let it knead until smooth. Or, use a stand mixer with the dough hook, kneading until a smooth dough forms. Transfer to a well-oiled bowl, cover with plastic wrap, and chill in the fridge for 3-4 hours.
  2. Roll the chilled dough on a floured surface to ½-inch thickness. Slice into 3-inch squares using a knife or pizza cutter.
  3. Heat 2-3 inches of vegetable oil in a deep fryer to 364°F (185°C). Fry the beignets in small batches, flipping until golden brown on both sides.
  4. Place the fried beignets on a paper towel or wire rack to drain excess oil. Generously coat them with powdered sugar. Serve fresh and enjoy!
