Ingredients
  

  • 3/4 cup fresh lime juice
  • 1/4 cup fresh mint leaves
  • 1/2 cup granulated sugar
  • 1/2 cup white rum
  • 1/2 cup coconut-flavored rum
  • 1 cup canned coconut milk
  • q.s. sparkling water
  • q.s. pomegranate seeds for garnish

Method
 

  1. In a large pitcher, combine the mint leaves, sugar, and lime juice. Muddle gently to release the mint's oils.
  2. Strain the mixture through a fine mesh sieve into another container to remove the mint bits.
  3. Fill four glasses halfway with ice cubes. Pour in equal parts of white rum, coconut rum, and coconut milk.
  4. Top off each glass with sparkling water until it’s three-quarters full. Garnish with extra mint leaves and pomegranate seeds.

Notes

For the best flavor, always use fresh lime juice instead of bottled. Feel free to adjust the sugar to taste; some prefer it sweeter while others enjoy a tangier drink.
