Ingredients
  

  • 250 g margarine or butter at room temperature
  • 150 g sugar
  • 3 units egg yolks
  • 200 g wheat flour
  • 300 g cornstarch
  • 2 tsp baking powder
  • 1 tsp vanilla essence
  • 1 cup grated coconut
  • 400 g dulce de leche (Arequipe)

  • Round cookie cutter (3-4 cm diameter)

Method
 

  1. In a large mixing bowl, beat the margarine or butter with the sugar until soft and spongy.
  2. Add the egg yolks one by one, mixing well after each addition, then stir in the vanilla essence.
  3. Sift the wheat flour, cornstarch, and baking powder into the mixture and fold until smooth.
  4. Dust your work surface with flour, roll out the dough to about 0.5 cm thick, and cut out circles using a round cookie cutter.
  5. Place the cookies on a baking sheet lined with parchment paper and bake at 180°C (350°F) for 6-8 minutes until lightly golden.
  6. Allow cookies to cool completely, then spread dulce de leche on one cookie, top with another, and roll edges in grated coconut.
