Ingredients
  

  • 600 g potatoes
  • 4 fillets cod (about 150 g each)
  • 100 g chorizo (mild or spicy), diced
  • 20 cl heavy cream
  • 2 tbsp butter
  • 10 cl heavy cream (for mashed potatoes)
  • 1 tsp smoked paprika (optional)
  • q.s. salt to taste
  • q.s. pepper to taste
  • fresh chives for garnish

  • Potato masher or ricer
  • Blender or immersion blender
  • Non-stick pan

Method
 

  1. Peel and chop the potatoes into even chunks and boil them in salted water until soft (about 15-20 minutes).
  2. Drain the potatoes and mash them with a potato masher or ricer. Add butter, cream, salt, and pepper, mixing until smooth.
  3. In a skillet, sauté the diced chorizo and shallot over medium heat until golden and fragrant, then stir in the cream and let it simmer for 5 minutes.
  4. Blend the chorizo mixture until smooth, then season with pepper and smoked paprika if desired.
  5. Heat a drizzle of olive oil in a non-stick pan and season the cod fillets with salt and pepper. Cook them skin-side down for 3-4 minutes on each side until opaque.
  6. To serve, spoon mashed potatoes onto each plate, place a cod fillet on top, and drizzle with chorizo cream. Garnish with fresh chives.
