Ingredients
  

  • 400 g cod fillet cut into chunks
  • 200 g peeled shrimp
  • 2 carrots sliced into rounds
  • 1 leek thinly sliced
  • 1 onion thinly sliced
  • 2 cloves garlic minced
  • 20 cl liquid cream
  • 1 egg yolk
  • 1 tablespoon flour
  • 20 cl vegetable broth or fish stock
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 bouquet garni (bay leaf, thyme, parsley)
  • to taste salt and pepper
  • 1/2 unit lemon juice of half

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Whisk
  • Sharp knife

Method
 

  1. Heat olive oil and butter in a large pot.
  2. Add the onion, garlic, carrots, and leek, then cook gently for about 5 minutes.
  3. Sprinkle the flour over the softened vegetables and stir well for one minute.
  4. Pour in the broth or fish stock and add the bouquet garni; bring to a boil then simmer for 10 minutes.
  5. Gently place the cod chunks into the simmering broth and cook for about 5 minutes.
  6. Add the shrimp and let them cook for another 3 minutes.
  7. In a small bowl, whisk together the egg yolk, cream, and lemon juice, then slowly pour the mixture into the pot while stirring gently.
  8. Adjust seasoning with salt, pepper, and lemon juice; remove the bouquet garni and serve hot.
