Ingredients
  

  • 400 g cod
  • 2 carrots
  • 1 zucchini
  • 2 tablespoons sour cream
  • 50 g grated cheese Gruyère, Parmesan, or your choice
  • to taste salt and pepper
  • 1 tablespoon chopped parsley
  • 1 tablespoon olive oil

Method
 

  1. Peel the carrots and chop them into small cubes, and do the same with the zucchini.
  2. Heat the olive oil in a pan over medium heat and sauté the diced carrots and zucchini for about 5 minutes until they are slightly golden yet firm.
  3. Cut the cod into bite-sized chunks and check for any stray bones.
  4. In a bowl, combine the cod, sautéed veggies, sour cream, half of the grated cheese, parsley, salt, and pepper, mixing until evenly coated.
  5. Divide the mixture into four individual ramekins and sprinkle the remaining cheese on top.
  6. Bake in a preheated oven at 180°C (350°F) for 20 minutes until bubbly and golden.
