- Boil 2 cups of water and dissolve the jello powder in a large mixing bowl.
- Stir until completely dissolved, with no lumps.
- Add 1 cup of cold water or a splash of cranberry juice and mix.
- Let the mixture sit for about 10 minutes to thicken slightly.
- Chop walnuts and dice the celery.
- Fold in fresh cranberries, pineapple chunks, diced celery, and chopped walnuts into the jello mixture.
- Gently mix in the sour cream until well combined.
- Pour the mixture into a serving dish or mold.
- Chill in the refrigerator for at least 4 hours (overnight is ideal).
- Once set, serve with optional toppings like mandarin oranges or an extra drizzle of sour cream.
