Ingredients
  

  • 1 package Cranberry Jello
  • 2 cups boiling water
  • 1 cup cold water (or cranberry juice)
  • 1 cup fresh Cranberries
  • 1 cup Pineapple chunks (fresh or canned)
  • 2 stalks Celery, diced
  • 1 cup Sour Cream (or cream cheese)
  • 1 cup Walnuts, chopped (or substitute with pecans or almonds)

  • Stirring spoon

Method
 

  1. Boil 2 cups of water and dissolve the jello powder in a large mixing bowl.
  2. Stir until completely dissolved, with no lumps.
  3. Add 1 cup of cold water or a splash of cranberry juice and mix.
  4. Let the mixture sit for about 10 minutes to thicken slightly.
  5. Chop walnuts and dice the celery.
  6. Fold in fresh cranberries, pineapple chunks, diced celery, and chopped walnuts into the jello mixture.
  7. Gently mix in the sour cream until well combined.
  8. Pour the mixture into a serving dish or mold.
  9. Chill in the refrigerator for at least 4 hours (overnight is ideal).
  10. Once set, serve with optional toppings like mandarin oranges or an extra drizzle of sour cream.
