Ingredients
  

  • 1.5 cups gluten-free graham cracker crumbs
  • 0.25 cups light brown sugar
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, room temperature
  • 14 oz sweetened condensed milk
  • 3 large eggs
  • 1 cup mashed ripe bananas about 2-3 bananas
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking pan lined with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs and light brown sugar. Add melted butter and mix until crumbly.
  3. Press the crumb mixture into the bottom of the prepared pan and bake for 10 minutes.
  4. In a large bowl, beat room-temperature cream cheese until smooth. Add sweetened condensed milk and beat until smooth.
  5. Add eggs one at a time, mixing well after each addition. Then mix in mashed ripe bananas and vanilla extract until well combined.
  6. Pour the filling over the baked crust and spread evenly. Bake for 30-35 minutes until the edges are set with a slight jiggle in the center.
  7. Allow the bars to cool completely in the pan at room temperature, then refrigerate for at least 2-4 hours until firm.
  8. Once chilled, lift the dessert out of the pan using the parchment paper and cut into squares. Serve plain or with optional toppings.
