- Place a large skillet over medium heat. Add a generous swirl of olive oil.
- Season the filets well with salt and pepper and cook them in the hot pan for 3-4 minutes undisturbed.
- Flip the filets and cook the other side for another 3-4 minutes; remove and set aside on a plate.
- In the same pan, add sliced onion and chopped garlic, and sauté until soft and translucent (about 3-5 minutes).
- Add sliced mushrooms and cook until golden brown, stirring occasionally.
- Lower the heat and add the Boursin cheese and heavy cream, stirring until smooth.
- Return the steaks to the pan and let everything simmer gently for about 5 minutes.
- Serve the steaks with sauce and mushrooms, garnished with fresh parsley.
