Ingredients
  

  • 8 ounces rotini pasta
  • to taste Olive oil
  • 2 tablespoons unsalted butter
  • 1 lb chicken breast, butterfly cut
  • 1 tablespoon Cajun seasoning
  • 4 cloves garlic, minced
  • 1/4 cup minced onion
  • 1/2 cup tomato sauce
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • Juice of 1/2 lemon
  • 2 tablespoons chopped fresh parsley leaves
  • to taste Salt and black pepper
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Boil water for pasta and cook according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil and season chicken with half the Cajun seasoning; cook for about 3 minutes per side until golden brown and cooked through, then remove and let rest.
  3. In the same skillet, melt butter, add garlic and onion; sauté until fragrant.
  4. Pour in tomato sauce and simmer briefly, then add heavy cream and chicken broth, stirring to a gentle simmer.
  5. Add remaining Cajun seasoning, lemon juice, and Parmesan cheese; stir until the sauce thickens slightly.
  6. Toss the cooked pasta in the sauce, add chopped parsley, and stir until well coated.
  7. Slice the chicken and arrange on top of the pasta; drizzle with extra sauce and garnish with parsley before serving.
