Ingredients
  

  • 12 oz bowtie pasta (farfalle)
  • 1 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • to taste salt and black pepper
  • 5 cloves garlic, minced
  • 1 cup chicken broth
  • 1.5 cups heavy cream
  • 4 oz cream cheese, softened
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning

Method
 

  1. Cook the bowtie pasta in salted boiling water until al dente, then drain and set aside.
  2. Heat olive oil and butter in a skillet over medium-high heat, add chicken and seasonings, cook for 6-8 minutes until golden brown, then set aside.
  3. Sauté minced garlic in the same skillet until fragrant, then add chicken broth and scrape the bottom of the skillet.
  4. Stir in heavy cream and cream cheese, whisk until smooth, then add all cheeses until sauce thickens.
  5. Add Italian seasoning and parsley, return chicken to the skillet and toss to coat well.
  6. Combine cooked pasta with the sauce in the skillet, letting it simmer for 2-3 minutes.
  7. Taste and adjust seasoning as needed, garnish with remaining parsley and a sprinkle of Parmesan before serving.

Notes
