Ingredients
  

  • 225 g linguine or preferred pasta
  • 450 g raw shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning or Old Bay seasoning
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon Italian seasoning or oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons butter
  • 4-5 cloves garlic, minced
  • 250 ml heavy cream
  • 50 g grated parmesan cheese
  • q.s. Fresh parsley, extra parmesan or red chili flakes for garnish optional

Method
 

  1. Start by boiling a large pot of salted water, then add your pasta and cook until al dente, about 10 minutes.
  2. Before draining, reserve about 125ml of the starchy pasta water.
  3. In a medium bowl, toss the shrimp with olive oil and seasonings until evenly coated.
  4. Melt one tablespoon of butter in a large skillet over medium-high heat, then add the shrimp and cook for about 1 minute per side until pink and slightly golden. Remove from the pan and set aside.
  5. Add the remaining tablespoon of butter to the same skillet, then toss in the minced garlic and sauté for about 30 seconds until fragrant.
  6. Pour in the heavy cream, grated parmesan, and reserved pasta water, stirring until the cheese melts and the sauce thickens slightly.
  7. Toss the cooked pasta into the sauce, coating every strand, then gently fold in the shrimp to warm through before serving.
