Ingredients
  

  • 1 lb bone-in pork chops, 1-inch thick
  • 1 tsp poultry seasoning or seasoning salt
  • 0.5 tsp freshly ground black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp unsalted butter (for gravy)
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 0.5 cup low-sodium chicken broth
  • 0.5 cup heavy cream
  • to garnish fresh parsley, chopped

Method
 

  1. Season the pork chops with poultry seasoning and black pepper on both sides.
  2. Heat the olive oil and butter in a large skillet over medium-high heat and sear the pork chops for about 5 minutes on each side until golden brown.
  3. In the same skillet, reduce the heat to medium, add another tablespoon of butter, and caramelize the sliced onions for 10-12 minutes.
  4. Add the minced garlic and chopped thyme to the onions and cook for 30 seconds.
  5. Pour in the chicken broth, scraping up browned bits, then whisk in the heavy cream and let it simmer for 1 minute.
  6. Return the pork chops to the skillet, reduce heat to medium-low, and cook until the internal temperature reaches 145°F (63°C).
  7. Remove from heat, garnish with parsley, and serve with mashed potatoes or egg noodles.
