- Season the pork chops with poultry seasoning and black pepper on both sides.
- Heat the olive oil and butter in a large skillet over medium-high heat and sear the pork chops for about 5 minutes on each side until golden brown.
- In the same skillet, reduce the heat to medium, add another tablespoon of butter, and caramelize the sliced onions for 10-12 minutes.
- Add the minced garlic and chopped thyme to the onions and cook for 30 seconds.
- Pour in the chicken broth, scraping up browned bits, then whisk in the heavy cream and let it simmer for 1 minute.
- Return the pork chops to the skillet, reduce heat to medium-low, and cook until the internal temperature reaches 145°F (63°C).
- Remove from heat, garnish with parsley, and serve with mashed potatoes or egg noodles.
