- If your seafood is frozen, thaw it completely and pat it dry with paper towels.
- Heat olive oil in a large skillet over medium heat, add the seafood, and cook for 2-3 minutes until slightly opaque, then remove and set aside.
- In the same skillet, add a drizzle of olive oil if necessary, toss in the garlic and shallots, and cook until softened.
- Pour in the white wine and turn up the heat slightly, letting it reduce by half.
- Lower the heat and stir in the cream, letting the sauce simmer gently for 5 minutes.
- Add lemon juice, Espelette pepper, and adjust seasoning.
- Return the seafood to the skillet, letting it warm through in the sauce for 2-3 minutes, and sprinkle with fresh parsley before serving.
