Ingredients
  

  • 500 g mixed seafood shrimp, mussels, squid
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 2 cloves garlic finely chopped
  • 1 shallot thinly sliced
  • 150 ml dry white wine or fish stock if preferred
  • 200 ml liquid cream
  • 1 tbsp lemon juice
  • 1 tsp fresh parsley chopped
  • Espelette pepper optional

Method
 

  1. If your seafood is frozen, thaw it completely and pat it dry with paper towels.
  2. Heat olive oil in a large skillet over medium heat, add the seafood, and cook for 2-3 minutes until slightly opaque, then remove and set aside.
  3. In the same skillet, add a drizzle of olive oil if necessary, toss in the garlic and shallots, and cook until softened.
  4. Pour in the white wine and turn up the heat slightly, letting it reduce by half.
  5. Lower the heat and stir in the cream, letting the sauce simmer gently for 5 minutes.
  6. Add lemon juice, Espelette pepper, and adjust seasoning.
  7. Return the seafood to the skillet, letting it warm through in the sauce for 2-3 minutes, and sprinkle with fresh parsley before serving.
