Ingredients

  • 1 1/2 cups milk whole or 2%
  • 10 tablespoons pastry cream powder
  • 1 medium potato boiled and mashed
  • 1/2 tablespoon milk
  • 1/4 teaspoon oil
  • 1 teaspoon dry organic yeast
  • 3 tablespoons sugar
  • 1/2 tablespoon salt
  • 500 grams flour

Equipment

  • Saucepan for making the custard cream
  • Mixing bowl for mixing the dough
  • Tea towel for covering the dough
  • Baking sheet
  • Pastry bag or resistant bag
  • Razor blade for cutting the buns

Method

  1. Pour the milk and pastry cream powder into a saucepan and mix well. Turn on the heat and stir constantly until thick and smooth. Transfer to a pastry bag and let it cool.
  2. In a large bowl, combine the mashed potato, egg, milk, oil, yeast, sugar, and salt. Mix well until smooth. Gradually add the flour, knead until soft and pliable for at least 15 minutes. Cover with a tea towel and let rise in a warm place.
  3. Once the dough has doubled in size, shape it into buns and place them on a baking sheet. Let them rise again, then make a cut on top of each bun and brush with a yolk and milk. Pour custard cream into the buns and bake until golden brown.
  4. Brush the baked buns with condensed milk and sprinkle with grated cheese or nuts. Let them cool slightly before serving.

Notes

Make sure your ingredients are at room temperature for better mixing. Knead the dough gently to avoid overworking it, which can make the bread tough. Use a very sharp razor blade to make clean cuts on the buns.
