Method
- Preheat your air fryer to 400°F (200°C).
- In a bowl, mix together the all-purpose flour, salt, black pepper, garlic powder, and paprika.
- In a separate bowl, whisk the egg and water until frothy.
- In another bowl, combine the panko breadcrumbs and crushed cornflakes.
- Dredge each cod fillet in the flour mixture, then dip it into the egg wash, and finally press it into the breadcrumb mixture.
- Spray the air fryer basket with olive oil or cooking spray. Place the breaded cod fillets in the basket without touching each other.
- Lightly spray the tops of the fillets with more oil and air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through.
- Once done, remove from the air fryer, let rest for a minute, and serve with lemon wedges and parsley.

Notes
For an extra layer of flavor, add a pinch of cayenne pepper to the flour mixture. Make sure your cod fillets are dry before dredging for better adherence of the breading. If you have leftovers, store them in an airtight container in the fridge for up to 2 days; reheat in the air fryer for optimal crispiness.
