Ingredients
  

  • 2 tablespoons Canola Oil divided
  • 450 g Ground Chicken
  • 1 medium Sweet Onion thinly sliced
  • 3 cloves Garlic minced
  • 130 g Diced Green Chilies from a can
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Smoked Paprika
  • 0.5 teaspoon Dried Oregano
  • 0.5 teaspoon Ground Cumin
  • 0.5 cup Fresh Cilantro Leaves chopped
  • 1 tablespoon Fresh Lime Juice
  • 1 cup Shredded Mexican Cheese Blend divided
  • 8 Flour or Corn Tortillas warmed

Method
 

  1. Preheat your oven to 220°C (425°F) and lightly grease a baking sheet.
  2. In a large skillet, heat 1 tablespoon of canola oil over medium-high heat and add the ground chicken, onion, and garlic; cook for 3 to 5 minutes until browned.
  3. Drain any excess fat, then stir in the diced green chilies, chili powder, smoked paprika, oregano, and cumin; cook for 1 to 2 minutes.
  4. Remove the skillet from heat and mix in cilantro and lime juice; season with salt and pepper.
  5. Spoon the chicken mixture onto half of each tortilla, sprinkle with cheese, and fold to seal.
  6. Place the tacos seam-side down on the baking sheet, brush with remaining canola oil, and bake for 12 to 15 minutes until golden brown and crispy.
