Ingredients
  

  • 1 whole camembert
  • 1 sheet puff pastry
  • 100 g turkey lardons
  • 2 small potatoes
  • 1 onion
  • 1 egg yolk
  • q.s. salt and pepper
  • q.s. olive oil
  • q.s. fresh thyme (optional)

Method
 

  1. Boil the potatoes in salted water until fork-tender, then drain and cool before dicing.
  2. Heat olive oil in a skillet over medium heat, then add diced onion and turkey lardons, cooking until golden.
  3. Preheat the oven to 350°F (180°C) and roll out puff pastry on a parchment-lined baking sheet.
  4. Place camembert in the center of the pastry, surrounded by the potato and lardon mixture, and season with salt and pepper.
  5. Fold the pastry around the filling, sealing edges tightly.
  6. Brush the top with beaten egg yolk and bake for 25–30 minutes until golden brown.
  7. Let the dish rest for a few minutes before slicing and serving.
