- Boil the potatoes until fork-tender, about 10 minutes, then let cool and dice into small cubes.
- In a skillet, heat olive oil over medium heat, sauté the diced smoked turkey and chopped shallot until golden and translucent, then let cool.
- Preheat the oven to 350°F (180°C). Roll out the puff pastry on a parchment-lined baking sheet, place the Camembert in the center, and surround it with the potatoes and turkey-shallot mix. Season with salt and pepper and drizzle honey if desired.
- Fold the pastry edges over the filling, sealing tightly, and brush with egg yolk.
- Bake for 25-30 minutes until golden brown and puffed. Let rest for a few minutes before slicing.

Notes
