Ingredients
  

  • 900 g potatoes cut into quarters
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon herbes de Provence
  • 100 g fresh goat cheese
  • 2 tablespoons thick sour cream
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic finely minced
  • 0.5 teaspoon honey

Method
 

  1. Preheat your oven to 200°C (400°F).
  2. Toss the potato wedges in a large bowl with olive oil, smoked paprika, herbes de Provence, salt, and pepper until evenly coated.
  3. Spread the potatoes on a baking sheet lined with parchment paper.
  4. Roast the potatoes in the oven for about 35-40 minutes or until golden brown and crispy, stirring after 15 minutes.
  5. While the potatoes roast, mash the goat cheese with the sour cream in a small bowl until smooth.
  6. Add olive oil, lemon juice, minced garlic, and honey to the goat cheese mixture and stir until well combined.
  7. Taste and adjust seasoning with salt and pepper.
  8. Once the potatoes are done, arrange them on a serving platter and drizzle with the goat cheese sauce.
  9. Garnish with fresh herbs and a drizzle of olive oil, if desired.
