Ingredients
  

  • 400 g white chicken (breast or thighs)
  • 200 g udon, soba, or rice noodles
  • 50 g breadcrumbs
  • 1 egg
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder or flakes
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon sesame oil
  • q.s. sesame seeds for garnish
  • to taste salt and pepper

Method
 

  1. Cut the chicken into thin strips or bite-sized pieces.
  2. In a bowl, whisk the egg with a pinch of salt and pepper until smooth.
  3. Dip each piece of chicken into the beaten egg, then roll it in the breadcrumbs.
  4. Heat oil in a large skillet over medium-high heat and fry the chicken for 5-7 minutes per side until golden brown and crispy.
  5. While the chicken fries, bring a pot of salted water to a boil and cook the noodles according to package instructions.
  6. Drain the noodles and toss with a drizzle of sesame oil to prevent sticking.
  7. In a small pan, heat sesame oil over low heat, add minced garlic and grated ginger, and stir until fragrant.
  8. Pour in soy sauce, honey, and chili powder, mixing well and let simmer to thicken slightly.
  9. To serve, divide the cooked noodles among plates, arrange the crispy chicken on top, spoon the spicy sauce over everything, and garnish with sesame seeds.
