Ingredients
  

  • 400 g boneless, skinless chicken breast
  • 200 g udon, soba, or rice noodles
  • 50 g breadcrumbs
  • 1 egg
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder or flakes
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon sesame oil
  • as needed sesame seeds for garnish
  • to taste salt and pepper
  • as needed oil for frying

Method
 

  1. Cut the chicken into bite-sized strips and season lightly with salt and pepper.
  2. Whisk the egg in a bowl until frothy; dip each chicken piece into the egg mixture and coat with breadcrumbs firmly.
  3. Heat oil in a large skillet over medium heat and fry the chicken in batches until golden brown and crispy, about 5-7 minutes per side. Drain on paper towels.
  4. Bring a pot of salted water to a boil and cook the noodles according to package instructions. Drain and rinse under cold water.
  5. In a small pan, heat sesame oil over low heat, add minced garlic and grated ginger until fragrant.
  6. Pour in soy sauce, honey, and chili powder, mixing well and simmer for a couple of minutes.
  7. Serve by dividing noodles into plates, topping with crispy chicken, and drizzling any leftover sauce over. Garnish with sesame seeds and fresh herbs if desired.
