Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa Use your favorite store-bought or homemade
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (15 oz) corn drained
  • 8 oz cream cheese cubed
  • 1/4 cup chopped fresh cilantro optional, for garnish

Method
 

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Sprinkle the taco seasoning over the chicken evenly.
  3. Add the salsa, black beans, and corn over the chicken.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, add the cubed cream cheese to the slow cooker.
  6. Use two forks to shred the chicken directly in the slow cooker.
  7. Serve the Crock Pot Chicken Fiesta over rice, in tortillas, or as a filling for burritos or tacos.
